Lemon Butter Zucchini Prawns

Ingredients

500g Raw King Prawns (peeled and deveined)

3 Med Zucchini (sliced into rounds)

4 Cloves Garlic (minced)

60g Butter

2 Lemons (one juiced, one sliced for garnish)

1 Tsp Lemon Zest

2 Tbsp Olive Oil

¼ Cup White Wine (optional)

Fresh Parsley (chopped, to garnish)

Salt and Pepper to taste

Crusty Bread or Rice (to serve)

Description

Succulent prawns and tender zucchinis in a rich lemon butter sauce. Quick, elegant, and impressive, ready in under 25 minutes. For the perfect sear and sauce that coats everything evenly, use our Blu. 28cm Sauté Pan with Lid  the high sides keep everything contained while you move the food freely around in the pan.

Method

Step 01

Heat 1 tablespoon olive oil in your 28cm Sauté Pan over medium-high heat. Add the zucchini slices in a single layer and cook for 2-3 minutes per side until golden and slightly softened. Season with salt and pepper. Remove and set aside.

Step 02

Add the remaining tablespoon of olive oil to the same pan. Add the prawns in a single layer and cook for 2 minutes on each side until pink and just cooked through. Remove prawns and set aside with the courgettes.

Step 03

Reduce heat to medium. Add half the butter to the pan along with the minced garlic. Cook for 1 minute, stirring constantly, until fragrant but not burnt.

Step 04

If using white wine, add it now and let it bubble for 1-2 minutes to reduce slightly. If not using wine, skip this step.

Step 05

Add the lemon juice, lemon zest, and remaining butter. Stir until the butter melts and the sauce comes together, about 1 minute.

Step 06

Return the zucchini and prawns to the pan. Toss gently to coat everything in the lemon butter sauce. Cook for 1-2 minutes until everything is heated through.

Step 07

Remove from heat and garnish with fresh parsley and lemon slices. Serve immediately with crusty bread or over rice.
