Blood Plum Clafoutis with Orange Yoghurt

Ingredients

4-5 Blood Plums

200ml Milk

2 tbsp Honey

1 Fresh Vanilla Pod

3 Eggs

1/3 Cup Almond Meal

1tbs Wholemeal Flour

150ml Greek Yoghurt

1 Orange - Zest Only

Description

Savour the rich, jammy goodness of Blood Plum Clafoutis — a French-inspired dessert that’s equal parts elegant and comforting. TIPS:

This can also be done with, peaches, nectarines, cherries and mango.

Method

Step 01

Preheat the oven to 160c.

Step 02

Scrape the vanilla seeds from the pod, mix with the eggs, milk, almond meal, half the honey and flour in a food processor till smooth.

Step 03

Cut the blood plums in half and remove the seeds.

Step 04

Place the remaining honey, vanilla pod and plums face down into your 20cm Blu. Frying Pan.

Step 05

Place on medium heat and cook for 5-6 minutes with the lid on until the plums are soft and most of the honey is a nice syrup texture.

Step 06

Turn the heat off and pour the batter over the plumbs into the pan.

Step 07

Place in the oven and cook for 15min or until the batter is firm and slightly golden. Mix the yoghurt and zest together and set aside.

To Serve you can leave in the pan or turn it out onto a plate and serve the yoghurt over the top.
