Ingredients

4 Organic Chicken

500ml Chicken Stock

2 Red Onions - peeled and cut in 6 wedges

4 Turkish Pickled Yellow Chilies

¼ Cup Baby Capers

2 Garlic Cloves - Chopped

2 Yellow Bull Horn Peppers - cut into rounds

1 Tin of White Beans

1 Lemon - Zest and Juice

2 Tbsp Olive Oil

1 Rosemary Sprig

2 Parsley Sprigs - finely chopped

Flake Salt

Method

Step 01

Heat the 28cm Sauté Pan pan over med/high heat and add the oil.

Step 02

Sear the chicken and cook until golden on both sides.

Step 03

Add the onions, garlic and capers then deglaze with the lemon juice and stock.

Step 04

Next add the lemon zest, rosemary and cover with the lid. Cook gently for 1-1/2 hours or until tender.

Step 05

Remove the lid and cook for another 15 min, then to finish mix in the white beans and chopped parsley.
