Ingredients

500g 10% Beef Mince

1 Cup Long Grain Rice

1 Med Onion (diced)

1 Red Capsicum (diced)

1 Green Capsicum (diced)

2 Cloves Garlic (minced)

1 Tbsp Olive Oil

2 Tsp Ground Cumin

1 Tsp Smoked Paprika

1 Tsp Chilli Powder

2 Cups Beef Stock

1 Can Diced Tomatoes (400g)

1 Avocado (diced)

½ Cup Sour Cream

Fresh Coriander (to garnish)

2 Limes (cut into wedges)

Salt and Pepper to taste

Description

A vibrant one-pan Mexican-inspired bowl with seasoned beef, fluffy rice, and crisp capsicums. Topped with creamy avocado, sour cream, and fresh lime for the perfect balance of flavours. For the ideal one-pan cooking experience, use Blu. Cookware's 28cm Fry Pan.

TIPS:

Swap beef mince for chicken or turkey mince for a lighter option. Add black beans or corn for extra texture. This reheats perfectly for next-day lunches. Top with jalapeños if you like extra heat.

Method

Step 01

Heat olive oil in your 28cm Fry Pan over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened.

Step 02

Add the beef mince, breaking it up with a wooden spoon. Cook for 5-6 minutes until browned all over. Add the minced garlic and cook for another minute.

Step 03

Stir through the cumin, smoked paprika, and chilli powder, coating the mince evenly with the spices. Cook for 1 minute until fragrant.

Step 04

Add the diced capsicums, rice, beef stock, and canned tomatoes. Stir well to combine, then bring to a boil.

Step 05

Reduce heat to low and simmer for 15-18 minutes until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Step 06

Remove from heat and let it rest for 2-3 minutes. Season with salt and pepper to taste.

Step 07

Serve topped with diced avocado, a dollop of sour cream, fresh coriander, and lime wedges on the side for squeezing over.
