Soy and Ginger Short Ribs with Udon Noodles and Asian Greens

Ingredients

1kg Beef Short Ribs

1.5 Lt Beef Stock (no salt)

½ Cup Soy Sauce

½ Cup Fresh Ginger, Roughly Chopped

1 White Onion

1 Bunch Spring Onions Cut Into 1-2cm Batons

2 Bok Choy Cut It Into ¼ (or your favorite greens), washed

125g Udon Noodles Raw

Description

Indulge in the savoury goodness of Soy and Ginger Short Ribs, accompanied by a Light Broth, Udon Noodles, and fresh Asian Greens. TIPS:

You can also use any noodle you want here, zucchini noodles are great in this dish too.

Method

Step 01

Place the Stock, short ribs, ginger, soy and white onions into the pot.

Step 02

Bring to a simmer and skim off any excess fat or impurities, place the lid on and bring to a gentle simmer.

Step 03

Cook for 3 hours or till the meat it soft and tender, carefully remove the meat and let cool slightly.

Step 04

Remove the bone and gently cut into small slices and place the meat back into the broth (you can also just shred the meat apart to).

Step 05

Bring a pot of water to the boil and cook the udon noodles till tender and strain.

Step 06

Just before serving add the Bok choy and spring onions to the broth and simmer for 1 min.

Step 07

Place the noodles in the serving bowl and add the meat, broth and vegetables to garnish.
