Creamy Coconut Garlic Prawns

Ingredients

Garlic Marinated Prawns

500g peeled prawns tails on

1 garlic clove, finely minced

1 tbsp olive oil

Pinch black pepper

Pinch flake salt

1 tbsp veg oil

Coconut Sauce

2 garlic cloves, finely minced

1 tbsp olive oil

1 cup chicken stock (unsalted)

1 cup coconut cream

1 tbsp red curry paste

2 tbsp chopped, coriander

To garnish, Vietnamese mint

Description

Method

Step 01

Marinate Prawns

Place prawns, garlic, oil and pepper in a bowl. Toss to coat, set aside for 20 minutes if time permits.

Step 02

Cook Prawns

Heat olive oil in our 28cm pan, over a medium high heat. Add half the prawns and cook for one minute on each side, then remove. Repeat with remaining prawns, then remove. Scrape out excess remaining garlic from pan and add to cooked prawns.

Step 03

Coconut Sauce

Add olive oil into pan, add garlic and stir for 30 seconds or until light golden.

Step 04

Add the curry paste and sauté for 1 min. Add the chicken stock and bring to simmer while stirring the base of the pan to dissolve all the golden bits into the sauce.

Step 05

Add cream, then simmer on medium heat for 2 minutes until reduced and slightly thickened.

Step 06

Then add the prawns back in and the chopped coriander, taste sauce and see if more salt and pepper is needed.

Step 07

Serve with Vietnamese mint and some lime and steamed rice.
