Ingredients

Tuna crust

1 Tbsp Sesame Seeds

1 Tbsp Black Sesame Seeds

1 Tbsp Caraway Seeds

1 Tsp Flake Salt

500g Fresh Tuna

Salad And Dressing

3 cups Wombok Roughly Sliced

½ Cup Coriander

½ Cup Parsley

2 Shallots Finely Diced

3 Turmeric

2 Tbsp Apple Vinegar

1 Tbsp Olive Oil

PinchFlake salt

TIPS:

This is great with lots of different fish too, king fish and salmon work just as well, so just use whatever is the freshest and tastiest.

Method

Step 01

Mix all the seeds and flake salt together, then coat the tuna in the seed mix.

Step 02

Heat a pan to medium high and place the tuna in.

Step 03

Cook till the seeds are lightly toasted on all sides of the tuna its about 1 min on each side.

Step 04

Remove the tuna and let cool.

Step 05

Add the shallots, turmeric, vinegar, oil and salt into the sauce pan and bring to a boil then let cool.

Step 06

Slice the tuna into roughly 1cm slices.

Step 07

On the serving plate, place the wombok and herbs down, then lay the tuna over the salad. To finish dress over the top with the dressing and a little flake salt.
