Shakshuka | Poached Eggs with Spicy Tomato Sauce

Ingredients

1 tbsp olive oil

1 onion finely chopped

3 garlic cloves crushed

1 tsp ground cumin

1 tsp ground paprika

½ tsp chili flakes

1 red capsicum, deseeded and diced

400g tin diced tomatoes

250g cherry tomatoes cut in half

4 eggs, free range

½ cup flat-leaf parsley leaves

1 hand full of spinach

1 tsp flake salt

Description

Savor the flavors of Shakshuka, a North African inspired dish that has captivated the Middle East. Featuring a delicious mix of capsicum, tomatoes, spices, and creamy eggs, Shakshuka offers a protein-rich meal that transcends breakfast, fitting perfectly into any part of your day.

Method

Step 01

Heat oil in our 20cm frying pan over medium heat. Add onions and garlic, cook for 2-3 minutes until softened. Stir in cumin, paprika, chilli flakes and salt, cook for 1 minute.

Step 02

Add capsicum, stirring often, for 2-3 minutes or until soft. Stir in canned tomatoes and cherry tomatoes. Bring to a gentle simmer and cover.

Step 03

Make 4 indentations in the tomato mixture. Crack an egg in to each. With the lid on cook over medium-low heat for 8-10 minutes or until yolks are almost set, or cooked to your liking.

Step 04

Whilst eggs are cooking in the 30cm pan, heat some olive oil and add spinach, cook until wilted.

Step 05

Garnish eggs with parsley. Serve with wilted spinach.
