Ingredients

Chicken tenderloins, cut into 1.3cm pieces

Pinch Pepper

Pinch flake salt

2 tbsp canola oil, divided

1 red onion, finely chopped

1 small green capsicum, finely chopped

1 small red capsicum, finely chopped

¼ cup water chestnuts, drained and finely chopped

6 button mushrooms finely chopped

2 garlic cloves, minced

1 tsp soy sauce

8 iceberg lettuce leaves or cos lettuce leaves

2 tsp salted peanuts

2 sprigs fresh coriander

Method

Step 01

Sprinkle chicken with salt and pepper. In our 32cm wok, stir-fry chicken in 1 tablespoon of oil until no longer pink. Remove and set aside.

Step 02

Stir-fry onion and capsicums in remaining oil for 5 minutes. Add water chestnuts, mushrooms and garlic. Stir-fry for 2-3 minutes longer or until vegetables are tender.

Step 03

Add soy sauce, stir in chicken and heat through.

Step 04

Place 1/2 cup chicken on each lettuce leaf; sprinkle each with 1-1/2 teaspoons of peanuts and 1/4 teaspoon of coriander.

Note: Add some chili for a bit of extra spice and also great finished with a hoisin sauce too.
